CUCUMBER BREAD-FAST

Opening the fridge door and seeing literally “nothing” inside, because you ate it all up on the weekend, can be quite demotivating for a good start into the day. If it’s also Monday morning we at least have Monday to blame it on.

This is how I felt today and then I saw the cucumber cuddling the green onion in the bottom drawer. “Ok, that’s a start”, was what I thought to myself. Grabbing them and the plant-based butter and the almost too-dry-to-eat bread I was good to go.

Remember, we are so used to having our daily routines and go-to meals, that we often forget to try out new things. A seemingly empty fridge got me get creative and I’ll definitely have this again soon in the future.

INGREDIENTS

bread; freshly baked is the best)
plant-based butter (margerine)
slices of cucumber
green onion
hemp seeds
black sesame (it's also nice with flax seeds or kala namak salt)
pinch of salt and pepper


PREPARATION

Well, we all know how to cut bread and spread it with butter and put cucumber slices on top. I think I don’t really have to tell you how it’s done.


INTERESTING FACTS

I personally like to sprinkle all different kinds of seeds on top. First of all it looks nice and fancy for that instagram photo, but secondly seeds are the extra nutrient sprinkles. Hemp seeds for example contain a significant amount of two essential fatty acids, namely omega-3 and omega-6 besides being a great source of proteine (yes, really - that damn proteine vegans lack). They contain high levels of magnesium, B vitamins, E vitamins, zink, and iron which makes them a natural solution to alleviating and reducing stress.
