VEGAN CHOCOLATE PEANUT BUTTER BROWNIES FOR LATE NIGHT CRAVINGS

I love peanut butter (and jelly), can you tell? Let me tell you the short story about these quick and easy vegan brownies I made yesterday.

I'm trying to reduce my sugar intake and candy cravings (yeahhh, joke's on me), so I try not to buy any more candy (semi-successful at this point, but this is not the topic). But sometimes cravings simply overtake me and I get creative with what we have at home. When I want something sweet, I want it right now and in this very second, but for this kind of deliciousness I can wait just 20 minutes. And so can you!

These brownies are super easy to prepare with simple ingredients that you will most likely all have in your kitchen at home.

Prep: 20 min • Makes enough for: 8 people

INGREDIENTS

240g oats or flour (2 regular sized drinking cups)
60g cocoa powder (1/2 a drinking cup)
50g date sugar (or any other) or 100ml maple syrup
1 mashed banana
1/2 pack baking powder
approx. 200ml plantmilk

1 tablespoon peanut butter
margarine or oil
pinch of salt
vanilla syrup (totally optional)
walnuts (optional)
jam (recommended blueberry or strawberry)


PREPARATION

This may look complicated according to the ingredients list, but believe me it is not.

  1. Mix oats to flour in a blender (or use flour if you have one at home) and put them in a big bowl.

  2. Add the cocoa powder, sugar of your choice, baking powder, mashed banana, a pinch of salt, vanilla syrup (optional) and plantmilk.

  3. Mix them with a hand blender or food processor. If the dough is too stiff, add more plantmilk until it is smooth. Make sure that the dough is not too liquidy and not too firm.

  4. Cover the baking pan or glass container with a layer of margarine or oil and pour dough into it.

  5. Now heat the peanut butter in a glas bowl in the microwave for a few seconds or over the stove until liquid consistency and drizzle over the dough. Sprinkle chopped nuts over it (optional) and put it into the oven for 20 minutes on 190°C heat.

  6. Enjoy warm or cooled down with jam and hemp seeds for the looks and nutrients.

Cocoa powder is made by crushing cocoa beans and removing the fat or cocoa butter.

Cocoa powder includes polyphenols which are naturally occurring antioxidants. They have been linked to numerous health benefits, including reduced inflammation, better blood flow, lower blood pressure and improved cholesterol and blood sugar levels. However, processing and heating cocoa can cause it to lose its beneficial properties.

It is versatile, e.g. for vegan baking, sprinkled over fruits, used in smoothies, in vegan chocolate mousse, or mix cocoa with your favorite plantmilk for a chocolate milkshake and add sweetness to it with banana or syrups (like maple, rice, or date).
