PLANT-BASED FLUFFY BERRY PANCAKES

Let’s be honest here; You can eat pancakes any time of day, right?

I am definitely not the best at having a typical breakfast due to my working and sleeping hours, therefore I often find myself having breakfast and lunch altogether. And what would be more perfect than pancakes? Right, nothing. Especially when they are so fluffy and wildly variable.

Prep: 10 min • Makes enough for 1 person

INGREDIENTS

140g flour
2 tablespoons maple syrup
1 tablespoon baking powder
240ml oat milk (or any other plant-milk of your choice)
1/2 teaspoon salt
1 tablespoon apple cider vinegar

fruits of your choice (here: berry mix & banana)
maple syrup & date syrup for topping
almond mousse

PREPARATION

  1. Mix all the ingredients together (except the toppings) and let them sit for 5 min.

  2. Put them in a hot pan and bake pancakes until golden brown.

  3. Serve them warm with the fruits and drizzle almond mousse and syrups over the cakes and fruits.

  4. Enjoy the fluffiness and deliciousness with no animals harmed.
